Ingredients

  • 1 cup (250ml) whole milk
  • a pinch of salt
  • 2/3 cup (130g) sugar
  • 2 cups (500ml) heavy cream or half-and-half
  • 5 large egg yolks
  • 3-4 tablespoons absinthe
  • about 1 1/2 cups chopped chocolate truffles, or chocolate chips
