A Simple Chicken Tagine, With Chickpeas And Mint

Ingredients

  • 1 tablespoon of olive oil
  • 1 yellow onion, thinly sliced
  • 6 garlic cloves, minced
  • 1 tablespoon of minced, peeled fresh ginger
  • 1 1/2 tablespoons of paprika
  • 1 1/2 teaspoons of turmeric
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1 teaspoon of cayenne pepper
  • 1/4 teaspoon of ground cinnamon
  • 2 cups of water
  • 2 cups of drained canned garbanzo beans
  • 3-4 tomatoes, diced (the original recipe calls for 1/2 cup of diced tomatoes from a can)
  • 1/2 cup of chopped cilantro
  • 1 lemon, cut into quarters, then thinly sliced
  • 2 tablespoons of lemon juice (from another lemon)
  • 4 chicken thigh pieces, skin removed
  • 2-3 chicken drumsticks, skin removed
  • 1 chicken breast half on the bone, skin removed
  • 3 medium carrots, peeled and cut into 2-inch pieces
  • 1.5 cups of baby zucchini, sliced in half (or several large zucchini, sliced into 2 inch rounds)
  • freshly chopped mint, to taste
  • salt and pepper, to taste
  • 1/2 cup of couscous (cooked according to package instructions)
